Profiteroles don’t like the Sun

A French wedding cake was the order of the day – a stunning pyramid of hand-made profiteroles, stuffed with soft cream and topped with delicate dark chocolate.
The creation sat in the corner of the Wedding Breakfast suite and while everyone was outside enjoying the glorious Scottish summer, being photographed and milling about, the cake decided to move. Well, it started to topple as each little profiterole unstuck itself from its neighbour. Thankfully, the balls of dough landed on the table (not the floor) and a quick reconstruction with cocktail sticks, re-decoration with chocolate & cream and fast freeze saved the day. And no-one was any the wiser.
